Easy & Deliscious Lentil Dahl

Ingredients (4-5 servings):

  • 1 red onion (finely chopped)
  • 2 garlic cloves (minced)
  • 1 tbsp fresh ginger (grated)
  • 100g uncooked red lentils
  • 1 big sweet potato (chopped in 1-2cm pieces)
  • 1 courgette (chopped in 1cm pieces)
  • a handful of fresh spinach
  • 1 can chickpeas (drained)
  • 1 tbsp curry powder
  • 1 tbsp cumin
  • 1 tsp turmeric
  • 1 vegetable stock
  • pink salt & black pepper to taste
  • 1 bunch fresh coriander (chopped)
  • 1 tbsp olive oil (or another vegetable oil)
  • 1l boiled water


  1. Put olive oil in a medium cooking pan and on medium heat. Add onion, garlic and give it a good stir, cook for 4 minutes.
  2. Add ginger, curry powder, cumin, turmeric, salt, pepper. Give it another good stir and cook for another minute.
  3. Add lentils and 1l water, give it a good stir and bring to the boil. Once it’s boiling add the vegetable stock.
  4. Add sweet potato, courgette, chickpeas and boil for 20-25 minutes or until the sweet potato and courgette is ready.
  5. Add spinach, coriander and stir for another 1-2 minutes until the spinach is soft. Now it’s ready to serve, enjoy your meal!
